Shrimp Mac and Cheese is an easy and decadent take on the classic Lobster Mac and Cheese.   • Ingredients:
  • 12 ounces large shrimp, peeled and deveined
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 tablespoons shallot, minced
  • 1 clove garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon crushed red pepper flakes
  • ¼ teaspoon black pepper, fresh ground
  • 8 ounces macaroni pasta
  • Sauce:
  • 2 cups whole milk, room temperature
  • ¼ cup flour
  • 3 tablespoons butter
  • 6 ounces sharp cheddar cheese, shredded
  • 4 ounces gruyere cheese, shredded
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, fresh ground
  • ¼ teaspoon nutmeg, fresh grated
  • Breadcrumb Topping:
  • ½ cup Panko breadcrumbs
  • ¼ cup parmesan cheese, fresh grated
  • 2 tablespoons fresh flat leaf parsley, chopped
  • 1 tablespoon butter, melted
  1. Preheat the oven to 375 degrees. Cook the pasta to al dente per the package directions and drain well.
  2. Cook the pasta to al dente per the package directions and drain well.Preheat a large skillet or fry pan to high heat.
  3. Add one tablespoon of butter and the olive oil. Swirl until melted and bubbly.
  4. Add the shallot, garlic, and crushed red pepper flakes and cook for 30 seconds, stirring constantly, until fragrant.
  5. Add the shrimp in a single layer to the pan and cook for 1-2 minutes. Flip and continue to cook for 30 seconds more just until shrimp is slightly opaque. Shrimp may be slightly undercooked. They will cook up in the oven.
  6. Remove the shrimp and drippings to a bowl.
  7. Turn the heat on the pan down to medium and melt the 3 tablespoons of butter for the sauce.
  8. Add the flour and cook, stirring, for 2 minutes.
  9. Slowly, begin whisking in the milk until everything is smooth and well incorporated.
  10. Cook for an additional 1-2 minutes until the sauce begins to thicken. It does not need to boil. Remove the pan from the heat.
  11. Add the salt, pepper, nutmeg and then the cheeses in batches, whisking to combine until the cheese is completely melted and smooth.
  12. Stir in the shrimp and drippings and the cooked and drained macaroni into the sauce.
  13. Divide among 3-4 gratin dishes (approx 2 cup size) that have been sprayed with cooking spray.
  14. Combine the Breadcrumb Topping ingredients together in a small bowl and then sprinkle evenly over the tops of the mac and cheese.
  15. Bake for approximately 10-15 minutes until the sauce is bubbly around the edges and the breadcrumbs have begun to brown.

Notes:A 9x16 baking dish may be used to serve family style. Creme Brulee ramekins may be used to serve as a side dish. Adjust bake time accordingly
